M\u0131s\u0131r\u0131n \u00fcretiminden sonraki en \u00f6nemli problemi kurutmad\u0131r.<\/p>\n<p>M\u0131s\u0131r\u0131n i\u015flenip uzun s\u00fcre bozulmadan saklanabilmesi i\u00e7in, %24-25 kuru baza g\u00f6re olan hasat nemini, %14 kb\u2019\u0131n alt\u0131na d\u00fc\u015f\u00fcrmek gerekir.<\/p>\n<p>Kurutman\u0131n amac\u0131;<\/p>\n<p>Tah\u0131l \u00fcretim verimlili\u011fini artt\u0131rmak, ekim alanlar\u0131ndan daha fazla yararlanmak, hasat sonras\u0131nda y\u00fcksek nem oran\u0131na sahip tah\u0131l\u0131n bozulmadan uzun s\u00fcre saklanabilmesi i\u00e7in, k\u00fcf ve \u00e7\u00fcr\u00fcmeden meydana gelen kay\u0131plarla, zararl\u0131 b\u00f6ceklerin etkilerini azaltmakt\u0131r.<\/p>\n<p>\u00dcr\u00fcn\u00fcn g\u00fcne\u015f alt\u0131na b\u0131rak\u0131larak do\u011fal olarak kurutulmas\u0131 bir\u00e7ok olumsuzlu\u011fu beraberinde getirmektedir. Daha uzun s\u00fcreli depolamalarda ise; nem oran\u0131n\u0131n kuru baza g\u00f6re %14\u2019 e indirilmesi gerekir.<\/p>\n<p>TSE taraf\u0131ndan yay\u0131mlanan, TS 3415\u2018 nolu standart m\u0131s\u0131r\u0131n tan\u0131m\u0131,<\/p>\n<p>s\u0131n\u0131fland\u0131r\u0131lmas\u0131, ambalajlanmas\u0131 vb. temel konular\u0131 kapsamaktad\u0131r. Bu standarda g\u00f6re m\u0131s\u0131ra ait temel \u00f6zellikler \u015fu \u015fekilde belirtilmektedir (TSE, 1979) :<\/p>\n<p>1. Kendine \u00f6zg\u00fc koku, tat ve renkte olmal\u0131, yabanc\u0131 tat ve koku, \u00f6zellikle k\u0131z\u0131\u015fma ve k\u00fcf kokusu olmamal\u0131,<\/p>\n<p>2. \u0130\u00e7erisinde canl\u0131 b\u00f6cekler bulunmamal\u0131,<\/p>\n<p>3. Islak ve % 15\u2019den fazla rutubetli olmamal\u0131d\u0131r.<\/p>\n<p>TSE taraf\u0131ndan belirlenen bu temel standart \u00f6zelliklerinden olan nem oran\u0131; al\u0131m-sat\u0131m yapan herkes taraf\u0131ndan yayg\u0131n \u015fekilde dikkate al\u0131nmaktad\u0131r. M\u0131s\u0131ra ait TSE standard\u0131nda temel \u00f6zelliklerin ba\u015f\u0131nda yer alan nem, piyasan\u0131n yerle\u015fik kural\u0131 haline d\u00f6n\u00fc\u015fm\u00fc\u015ft\u00fcr ve bu \u00f6zelli\u011finden dolay\u0131 da m\u0131s\u0131r pazarlamas\u0131nda dikkat edilen en \u00f6nemli kriterdir. Nem oran\u0131n\u0131n \u00f6nemli derecede dikkate al\u0131nmas\u0131n\u0131n nedeni ise m\u0131s\u0131r\u0131n hasat edilebilmesinin yan\u0131 s\u0131ra depolanabilmesi ya da i\u015flenebilmesi i\u00e7in d\u00fc\u015f\u00fck oranda nem i\u00e7ermesinin zorunlu olmas\u0131d\u0131r .<\/p>\n","protected":false},"excerpt":{"rendered":"<p>M\u0131s\u0131r Kurutma Neden \u00d6nemlidir ?
